We set out to shed some light on coffees prepared by a simple method: pour over. We will focus on the Chemex, much more accessible to those who want to get a good coffee in a relatively short time, without too much hassle, through a more rigorous control of the infusion.
The procedure is simple, but for optimal results you need a number of tools:
- Chemex machine ;
- a special filter, made by the Chemex company;
- coffee grinders (the coffee grind must be larger than the filter) ;
- scale (60 gr coffee / 1l boiled water) ;
-kettel (kettle);
- thermometer (approx. 90 degrees C);
- coffee (ideally: ground on the spot) .
Once you have the necessary things at hand, the preparation of coffee is carried out in the following way:
1. Take the special filter and fold it in such a way that a geometric cone shape results; it sits pointed side down on the neck of the Chemex container;
2. Place the freshly ground coffee (60 gr of coffee / 1 l of water) with the spoon in the cone resulting from the coffee filter;
3. When the water reaches the boiling point, remove it from the heat source and wait a few moments for the water temperature to reach 90 degrees Celsius; in the first phase, pour a small amount of water over the coffee, just until the coffee becomes wet, wait a few seconds, then pour the entire amount of prepared water, slowly, always checking that the water level is well below the upper limit of the Chemex container; at the same time, watch carefully how the coffee is extracted, the liquid draining to the bottom of the container;
4. When you have obtained the desired amount of coffee, remove the filter, pour the coffee into porcelain cups and serve immediately.
