The CULTURING or CO-FERMENTATION process is a fermentation technique created by farmer Julio Andres Quiceno, in which fruits, aromatic plants, and spices are used to ferment in combination with coffee, utilizing bacteria and yeast that generate metabolic processes, resulting in unique sensory profiles.
Purple Madness – is crafted using Café UBA’s culturing fermentation process, where the coffee is fermented with a must of blackberries, grapes, and aromatic herbs under restricted oxygen for over 144 hours. This in-house developed technique combines fruits, spices, selected bacteria, and yeasts to trigger complex metabolic reactions, resulting in a vibrant cup with unique and expressive sensory notes.
